There are certain foods that evoke fall for me. Cinnamon spice, apple everything, even pumpkin. Without a sense of smell, I rely heavily on my tastebuds, and one recipe that is quintessential fall is my grandmother's molasses cookies.
These cookies have just the right amount of cinnamon, molasses and ginger that are the perfect accompaniment to apple cider, a glass of milk or a cup of tea or coffee. Super easy to make, I pulled out the recipe this weekend to finally get some fall baking in.
Ingredients:
3/4 cup butter (i.e. a stick and a half)
1 cup brown sugar
1 egg
1/4 cup molasses
2 1/4 cups flour
2 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1 tbsp. ginger
1/2 tsp. clove*
1/2 cup sugar**
*I don't usually have clove around the house, so I leave it out
**this ingredient comes after the rest have been mixed together
Preheat oven to 350 degrees. Mix all ingredients (I use my Kitchenaid stand mixer, which makes things super easy!) and place bowl of cookie dough in fridge to chill (at least an hour).
Put 1/2 cup sugar into small bowl. Roll dough into 1-inch balls, then roll each in bowl of sugar, enough to cover entire dough ball. Place 2 inches apart on cookie sheet.
Bake 8 minutes. Let cool, enjoy! *Note, these should have a soft and chewy consistency, but if you want them crunchy, you can bake longer.
I always think of my grandmother when I make these. A fall favorite for sure!
