finding comfort in the littlest things

When current events become too overwhelming for me emotionally, I need to focus on other things. If I watch or read too much that is taxing, I begin to shut down, and when that starts to happen, I need to pull myself out of it and focus on something else - planning an event or a trip or an activity or doing a project.


Or... working on my blog! So, I will share a favorite recipe my mom gave me - cheesecake. I apologize if it seems odd that I touch on a serious current event and follow it with a recipe. Baking helps me deal with life's stuff. So read on for the 'Sign of the Steer' cheesecake that comes from a restaurant in Buffalo, N.Y. where both of my parents are from!

Sign of the Steer Cheesecake



Ingredients


Crust:

2 Cups graham cracker crumbs

1/4 Cup butter

2 Tablespoons Sugar


Filling:

(3) 8 ounce cream cheese

3/4 Cup sugar

1/2 teaspoon salt

2 teaspoon vanilla

1 teaspoon lemon juice

2 eggs


Topping:

2 Cups sour cream

1/2 Cup sugar

1 teaspoon vanilla

1/8 teaspoon salt

You will also need a mixing bowl and/or a stand mixer and a springform pan.



1) Preheat oven to 350 degrees. Combine crust ingredients and press into a greased springform pan.



Mix filling ingredients (I use the stand mixer for this).





Spread into springform pan and bake in preheated oven for 40 minutes. Let cool.


Combine topping ingredients (can use the stand mixer or just a regular bowl to combine).




Spread on top of cooled cheesecake and bake for 10 minutes more.


Let cool completely (I actually will refrigerate the cheesecake overnight so it fully congeals). Serve plain or with fruit on top and enjoy!
